I am excited and a little pensive for my first days at Venta Moncalvillo. What will it be like?  What will I be doing? Will I make friends?  Haha those tricks of the mind, right?

As lay of the land goes, they have a pretty sweet place. 4 dining rooms, 2 kitchens with a wood burning oven and all the toys, a wine cellar, a garden and a very friendly staff. Sounds nice, right?  

   
    

 
The restaurant is run by chef Ignacio, Som (and brother) Carlos, with various help from mom. dad and a dedicated staff. 

They were nice enogh to offer me a place to stay during my stage in Lardero, a suburb of Logroño. My flat mate was another cook on stage. Like I said, back to school. 

There is a lot to learn in a new environment. In addition, my Spanish is medium at best although my kitchen and eating Spansh is better since I am more movated in that area. 

My first night was full of excitement as I was seeing every plate for the first time. That and trying to stay out of the way!  A few things that stood out were 

bacalao mousse with silver plate… 

 

Caramels of cheese with honey in edible wrappers…

 

And cocochas (cheeks) of sturgeon  cooked over dry grape vines…
 

If these first few days are an indication of what I am going to experience, then I’m a happy guy…
